AguaHatch Chiles

Traditional Aguachiles consists of cucumbers, shrimp, onions, jalapeños, and lots of limes. It’s a delicious dish that allows shrimp to be cooked in a spicy mixture. Using hatch chiles instead of jalapeños brings sweetness and smokiness to the flavor, while keeping the spice to a mild level. It’s a refreshing and delicious dish that’s similar to ceviche.

Ingredients:

Aguachile Marinade

  • 1 clove of garlic
  • 1 cup of cliantro, about half a bunch
  • 3 Hatch Chiles, split in half
  • 1 tsp of kosher salt
  • 1/2 cup of lime juice, about 2-3 limes

Shrimp

  • 1 Pound of Cooked Shrimp (From the meat counter, not frozen)
  • 4 Large Limes
  • Generous pinch of salt
  • 1/4 of a red onion, thinly sliced

Garnishes

  • 1 cup of cucumbers
  • Sliced avocado
  • Extra cliantro
  • Cleo & Leo Tortilla Chips/Tostadas (To eat the aguachiles with)

Directions:

  1. To start, split the pound of cooked shrimp in half and remove any veins or tails.
  2. Now place the shrimp in a large bowl and squeeze enough lime on top to cover the shrimp fully. Now sprinkle a little salt and allow the shrimp to sit in the marinate for at least 20 – 30 minutes.
  3. In another bowl, place the thinly sliced red onion and season it generously with salt. Pour enough water to cover the onions.
  4. For your marinade add your clove of garlic, cilantro, hatch chiles, salt, and lime juice into a blender. Blend the marinade until it has a smooth consistency.
  5. Optional: While that’s blending prepare your garnishes by slicing your avocado, cilantro and cucumbers.
  6. In a serving dish, add your shrimp and the lime juice first. Then pour your marinade over the shrimp. Next, add your red onion from it’s bowl and garnishes.
  7. Cover your dish with tinfoil and refrigerate it for at least 30 minutes to chill.
  8. Enjoy your dish cold with Cleo & Leo tortilla chips or on a tostada.
