What To Do with Leftover Pumpkin

With fall in full swing, the weather is cozy, making it perfect for relaxing and staying home. Pumpkin is the flavor of the season, but if you find yourself with too much and don’t know what to do, try these delicious recipes. They’re perfect for holiday parties and family gatherings!

Pumpkin Spice Carlota

A delicious seasonal revamp, this Pumpkin Spice Carlota is the perfect no bake cake of your dreams. Layered with Maria’s Cookies dipped in a fluffy pumpkin whipped cream, it’s a dessert that feels like fall in every slice. 

Ingredients
  • 1 bar of Stater Bros. Cream Cheese
  • 1 can of Stater Bros. Condensed Milk
  • 1 can of Stater Bros. Evaporated Milk
  • 1 Cup of Stater Bros. Whipping Cream
  • 1 can of Full Circle Market Pumpkin Puree
  • 1 tbsp. of McCormick Pumpkin Pie Spice
  • 2 Packs of Marias Cookies
  1. In a large bowl, combine cream cheese with condensed milk, evaporated milk, whipping cream, pumpkin puree, and pumpkin pie spice seasoning with an electric mixer on medium speed.
  2. Place a single layer of Marias Cookies inside a baking dish, pour enough of the pumpkin mixture to cover the cookies.
  3. Add another layer and repeat the process until there are at least 4 layers of cookies.
  4. Place it in the fridge and let it set for about 4 hours or leave overnight for best results.

Pumpkin Spice Crisp Rice Bars

Turn up the pumpkin flavor with these Pumpkin Spice Crisp Rice Bars. They’re just the right blend of sweet and spice that’ll have you craving more all season long. 

Ingredients
  • 4 tbsp. Stater Bros. Salted Butter
  • 7 ½ cups Stater Bros. Mini Marshmallows
  • 2 tsp. McCormick Pumpkin Pie Spice
  • 6 cups Food Club Crisp Rice Cereal
  • Stater Bros. Vanilla CandiQuik Candy Coating
  1. Spray an 8×8″ baking pan with non-stick cooking spray.
  2. Melt butter in a large pot over low heat. Add marshmallows and stir until melted.
  3. Add the pumpkin pie spice and stir until well combined. Turn off the heat.
  4. Stir in rice cereal and mix until it’s evenly coated in marshmallow.
  5. Add to the baking pan and press to spread evenly. Use a piece of wax paper to press into the pan.
  6. Melt the candy coating following package instructions, then drizzle over the cereal treats.
  7. Remove from pan, cut into squares and enjoy!

Ingredients
  • 2 cups Stater Bros. All-Purpose Flour
  • 2 tsp. Full Circle Ground Cinnamon
  • 2 tsp. Stater Bros. Baking Powder
  • 1 tsp. Stater Bros. Baking Soda
  • 1 tsp. Stater Bros. Salt
  • 4 Large Eggs
  • 1 ⅔ cups Stater Bros. Granulated Sugar
  • 1 cup Stater Bros. Vegetable Oil
  • 15 oz. (1 can) Full Circle Market 100% Pure Pumpkin
  • Cream Cheese Frosting
  1. Preheat oven to 350°F. Spray a 9×13″ baking pan with nonstick cooking spray.
  2. In a medium bowl, combine flour, cinnamon, baking powder, baking soda and salt. Set aside.
  3. In a separate bowl, combine eggs, sugar, oil, and pumpkin using an electric mixer on medium speed.
  4. Add the dry ingredients to the pumpkin mixture and mix well, scraping the sides of the bowl as needed.
  5. Pour into the prepared pan and bake for 30 to 35 minutes.
  6. Let cool then frost with cream cheese frosting.

Pumpkin Butter

Ingredients
  • 1 Lemon
  • 1 can Full Circle Market Organic Pure Pumpkin Purée
  • ½ cup Stater Bros. Dark Brown Sugar
  • ½ to ¾ cup Stater Bros. Unsweetened Apple Juice
  • 2 tbsp. Full Circle Market Honey
  • 2 tsp. McCormick Pumpkin Pie Spice
  • ½ tsp. Food Club Salt
  1. Add all the ingredients to a saucepan and cook over medium heat, stirring occasionally, for 25 to 30 minutes, until thickened.
  2. Remove from heat and let cool slightly before transferring to a container and storing in the fridge.
