One Pot Broccoli Cheddar Soup
As the weather cools down, there’s nothing more comforting than a bowl of our creamy One Pot Broccoli Cheddar Soup. It’s rich, cozy, and full of flavor. Enjoy it on its own or with a slice of our freshly baked bread for the perfect fall meal.
Ingredients
- 2 tbsp. Stater Bros. Salted Butter
- ½ Yellow Onion, diced
- 2 Garlic Cloves, minced
- 2 tbsp. Stater Bros. All Purpose Flour
- 2 cups Full Circle Market Organic Vegetable Broth
- ¼ tsp. Full Circle Market Paprika
- Salt and Pepper to taste
- 1 Large Carrot, shredded
- 3 cups Broccoli, chopped to small florets
- 2 cups Stater Bros. Mild Cheddar Cheese, shredded
- 1 ½ cups Stater Bros. Heavy Whipping Cream
Directions
- In a large pot, melt butter and sauté onions for about 5 minutes.
- Add garlic and cook 1 minute.
- Add flour and stir.
- Add vegetable broth and seasonings.
- Add carrot and broccoli, cover and cook for 15 minutes.
- Add cheese and heavy cream. Stir until cheese is thoroughly melted. Taste for seasoning and add more salt and pepper if needed.
Sopa de Conchas
This hearty sopa de conchas is the ultimate comfort food for fall, with tender pasta shells simmered in a rich, savory broth that warms you up from the inside out.
Ingredients
- 7 oz. pkg. La Moderna Shells
- 2 tbsp. Stater Bros. Vegetable Oil
- 8 oz. Stater Bros. Tomato Sauce
- 1 White Onion, quartered
- 2 Garlic Cloves, minced
- 2 cups Stater Bros. Chicken Broth
- Knorr Chicken Bouillon, to taste
Directions
Heat vegetable oil over medium-high heat in a large pot. Add shells and onion and toast. Within the last 2 minutes of toasting, add garlic.
Add tomato sauce, broth and bouillon. Heat until shells are cooked through, stirring occasionally.
Slow Cooker Tuscan Meatball Soup with Gnocchi

- 32 oz. pkg. Stater Bros. Italian Style Meatballs, frozen
- Stater Bros. Extra Virgin Olive Oil
- ½ Yellow Onion, diced
- 4 Garlic Cloves, minced
- 8.5 oz. jar Culinary Tours Julienne Cut Sun-Dried Tomatoes, oil drained
- 32 oz. Stater Bros. Chicken Broth
- ½ cup Stater Bros. Heavy Whipping Cream
- 1 tsp. Stater Bros. Salt
- 1 tsp. Full Circle Market Organic Black Pepper
- 1 tsp. Full Circle Market Organic Italian Seasoning
- 17.6 oz. bag Culinary Tours Gnocchi
- 5.25 oz. bag Stater Bros. Baby Spinach
- ½ cup Stater Bros. Grated Parmesan Cheese, plus additional for serving
Directions
- Heat oil in a pan over medium heat and sear meatballs until browned.
- In a slow cooker, add meatballs, onions, garlic, broth, and salt. Cover and cook on high for about 4 hours.
- Add gnocchi and sundried tomatoes, cover, and cook for about 20 minutes, until gnocchi is tender.
- Stir in spinach, cream, and parmesan. Cook for 5 more minutes or until spinach is wilted.
- Serve topped with additional parmesan.
Chicken Tortilla Soup
Nothing says fall comfort like a warm, hearty bowl of our pollo asado tortilla soup. Known as Sopa de Tortilla con Pollo Asado, this classic dish is the perfect way to savor the season with rich, comforting flavors that’ll warm you from the inside out.
Ingredients
- Stater Bros. Vegetable Oil
- Stater Bros. Corn Tortillas
- Stater Bros. Salt
- ½ White Onion, quartered
- 4 Roma Tomatoes, quartered
- 3 to 4 El Guapo Guajillo Chiles, stems removed (use more for a spicy soup)
- 2 to 4 cups Stater Bros. Chicken Broth
- 1 tbsp. Knorr Chicken Bouillon
- 1 tsp. Full Circle Market Organic Cumin
- 1 tsp. Full Circle Market Organic Paprika
- Cleo & Leo Pollo Asado from our service deli, shredded
- Stater Bros. Queso Quesadilla
- Avocado, cubed
- Cilantro
Directions
- Heat 2 to 3 tbsp. vegetable oil in a large pot. Cut a few tortillas into strips and fry until crispy. Remove from pot and place on paper towels to drain. Sprinkle with salt.
- In the same pot (remove some oil if needed), add onion and tomatoes. Also add 1 whole tortilla. Cook down for about 5 minutes.
- Add guajillo chiles and 2 cups of chicken broth. Top with a lid and cook for 5 minutes or until chiles are softened.
- Transfer to a blender and season with bouillon, cumin, and paprika. Blend until smooth and season to taste, adding more salt/seasonings if needed.
- Pour back into the pot and add the shredded pollo asado. Add more broth if desired. Heat for 5 to 10 minutes.
- In your bowl, add queso, then top with tortilla strips. Ladle on the soup. Top with avocado and cilantro.
Fideo Verde
Cozy up with a bowl of fideo verde, a classic comfort food with a zesty green twist. Toasted noodles simmer in a rich, flavorful sauce made from tomatillos, peppers, and fresh herbs, creating a warm and inviting dish that feels like autumn in every spoonful.
Ingredients
• 1 tbsp. Stater Bros. Vegetable Oil
• 7 oz. bag La Moderna Pasta Fideo
• 2 White Rose Potatoes, diced
• 8 Tomatillos
• 2 Jalapeños
• ½ White Onion
• 4 Garlic Cloves
• 1 Bunch Cilantro
• 6 cups Stater Bros. Chicken Broth
• 1 tsp. Food Club Salt
• 1 tsp. Full Circle Market Black Pepper
• ½ tsp. El Guapo Ground Cumin
• ½ tsp. El Guapo Whole Oregano
• 2 cups of Spinach
• 1 Italian Squash, sliced
Optional Toppings:
- Cacique Ranchero Queso Fresco
- Avocado
Directions
1. Heat 1 tbsp. Stater Bros. Vegetable Oil in a large pot over medium heat. Add the fideo and toast for 3 to 5 minutes, stirring often, until lightly golden.
2. Add diced potatoes and continue cooking with the fideo for 5 to 7 minutes, or until most of the pasta is golden brown and the potatoes soften.
3. In a blender, combine tomatillos, jalapeños, onion, garlic, cilantro, 2 cups of Stater Bros. Chicken Broth, salt & pepper, cumin, and oregano. Blend until smooth. Add spinach and blend again until fully combined.
4. Pour the green broth mixture into the pot with the fideo and potatoes and stir well.
5. Bring it to a simmer and cook for 1 to 15 minutes, uncovered.
6. Add diced Italian squash and cook for 4 to 6 minutes, or until the potatoes are tender. Taste and adjust as needed.
Optional: Garnish with avocado and queso fresco.
Creamy Rotisserie Chicken Soup

Ingredients
- 1 tbsp. Stater Bros. Olive Oil
- ½ cup Carrots, diced
- ½ cup Yellow Onions, diced
- ¼ cup Celery, diced
- 3 Cloves Garlic, minced
- 1 tsp. Full Circle Market Organic Oregano
- 1 tsp. Salt
- 1 tsp. Full Circle Market Organic Black Pepper
- 2 cups Stater Bros. Chicken Broth
- 1 ½ cups Cleo & Leo Rotisserie Chicken, shredded
- 1 cup Stater Bros. Heavy Whipping Cream
- 1 cup Stater Bros. Small Elbow Macaroni
Directions
- Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion and sauté until onions are translucent.
- Add garlic, oregano, salt and pepper. Stir well and cook for 2 minutes.
- Add chicken broth, shredded chicken, heavy cream and uncooked pasta. Mix well and cook for about 8 minutes or until the pasta is cooked through.
- Serve topped with parmesan cheese and enjoy!
