Vegan Tofu Fried Rice

Ingredients:

  • 1 cup day old rice
  • 1 block tofu, pressed
  • 4 cloves garlic, minced
  • 1 cup diced white onion
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • 1/2 cup carrots, finely diced

Sauce

  • 3 tbsp. tamari or soy sauce (plus more for veggies + to taste)
  • 1 tbsp. peanut butter
  • 2-3 tbsp. brown sugar
  • 1 clove garlic, minced
  • 1-2 tsp. chili oil (more or less depending on preferred spice)
  • 2 tsp. avocado oil or sesame oil

Directions:

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Dice pressed tofu into 1/4-inch cubes and put on baking sheet. Bake for 26-30 minutes.
  3. To prepare the sauce, add tamari, peanut butter, brown sugar, garlic, chili oil and avocado oil in a bowl and whisk until combined.
  4. Once the tofu is done add it to the sauce to marinate for 5 minutes.
  5. Heat a large skillet, cast iron is best. Use a slotted spoon to put tofu into the pan leaving most of the sauce behind. Cook for 3-4 minutes until golden brown. Remove from pan and set aside.
  6. To the same pan add garlic, onion, peas and carrots. Sauté for 3-4 minutes and add 1 tbsp. of tamari or soy sauce.
  7. Add cooked rice, tofu, and remaining sauce and stir well. Cook over medium-high heat for 3-4 minutes.
